It's hard to fully embrace fall when it still feels like summer in south Florida. In fact, we were just out on the boat playing in the water last weekend--that just doesn't feel like fall to me. With that said, I have one last summery cocktail for you. Let me introduce you to the Watermelon Martini with a twist. I used Square One Cucumber Vodka. It's a light, refreshing vodka that pairs perfectly with watermelon and a sprig of mint.

Ready to make an easy refreshing cocktail? You know you want one more weekend of summer in your life! This is an easy one, and you can use fresh or frozen watermelon. (If you're like me, you usually have some frozen fruit for adding to smoothies.)
PREPARE WATERMELON MARTINI WITH CUCUMBER VODKA:
You'll need 2 one-inch cubes of watermelon, about two tablespoons. If you're using frozen, allow it to thaw, about fifteen minutes. Place the watermelon, 3 tablespoons of water, and ½ teaspoon agave nectar into a mini food processor, such as a Magic Bullet. Process until smooth.
Add the watermelon puree and 3 ounces cucumber vodka to a cocktail shaker with ice. Shake vigorously until well chilled. Strain into a martini glass, and garnish with a mint sprig and cucumber wheel. Yep, it's that easy.
Find yourself a patch of sunshine, and enjoy a light, slightly sweet, refreshing cocktail before summer is truly gone.
