How to Prepare Zucchini Fries in an Air Fryer:

- Set the air fryer to 375ºF on the air fryer setting.
- While the air fryer is preheating, cut the zucchini into long wedges. First, slice the ends off the zucchini, then slice in into lengthwise quarters. Slice the long wedges in half. Set aside.
- Whisk the cornstarch, salt, pepper, garlic powder, and smoked paprika in a large bowl. Add the zucchini wedges, and toss to lightly coat.
- Set up your dipping station: Whisk the egg into a large, shallow bowl. In a second shallow bowl, mix together the panko crumbs and the parmesan cheese.
- Dip each zucchini fry is egg wash, then press into the breading mixture on each side.
- Place the breaded zucchini fries on a lightly oiled air fryer basket taking care to leave space between each slice.
- Cook in the 375ºF air fryer for 20 minutes. Serve as they are or with your favorite dipping sauce.
