Steak Roll Ups have become one of Russ's favorite dinners, which I love because they are so easy to make. You can prep them the night before or in the morning, then simply pop them in the oven for a quick week night dinner. With only about twenty minutes of prep time, even if you don't prepare the Steak Roll Ups ahead of time, dinner is ready in under an hour.
All you need to make this delicious and simple dinner is thin sliced steak (I used top round.), peppers, onion, mozzarella cheese, spinach, and a few spices. I used baking twine to secure mine, but if you don't have that on hand, you could use a few toothpicks to secure the Steak Roll Ups. Note: If you're staying Whole30 friendly, simply omit the mozzarella cheese.
Begin by thinly slicing the peppers and onion. Use a non-stick pan to sauté the peppers and onion for about five minutes, just until they begin to soften. While the veggies are cooking lay the steak slices on a cutting board, and season both sides with salt, pepper, and garlic powder. Don't forget to stir the veggies a few times. When the veggies are soft enough for your liking (Remember, they'll cook a bit more in the oven with the steaks.), remove them from the heat and set aside.
Meanwhile, preheat the oven to 350ºF, and begin layering the steaks. Place the slices of mozzarella cheese first, followed by the peppers and onion, then top with the spinach. Beginning at one end, carefully roll the steak while pressing down on the spinach as you go. Once the steak is rolled, use two pieces of cooking twine or a few toothpicks to secure. Place each Steak Roll Up in a lightly greased baking pan.
Bake for about twenty minutes, or until desired doneness is reached. We like our meat more on the medium side, and the slices I used were quite thin, so it cooks rather quickly. - 3 slices onion
- 1 cup spinach, loosely packed
- 1 teaspoon Himalayan pink salt, or to taste
- 1 teaspoon black pepper, or to taste
- 1 teaspoon garlic powder, or to taste
- 3 ounces mozzarella cheese (Omit for Whole30.)
Instructions
- Preheat the oven to 350ºF.
