Oven roasting veggies just brings out so much more flavor. It is second only to grilling them for me. This oven Roasted Broccoli is simple to make, and you can easily time it with whatever else you have in the oven. I served it with roasted barbeque chicken quarters and potatoes. Guess what? Russ usually eats up all the potatoes, but this time it was the broccoli he filled up on. Score a win for the veggies!
You're going to need your 21 Seasoning Salute for this recipe, so pull it out of the cupboard. What? You haven't bought it yet? What's wrong with you? No worries. I've also made this recipe simply using salt, pepper, and garlic powder. Feel free to substitute if need be.
Place your broccoli florets in a bowl, drizzle with extra virgin olive oil and balsamic vinegar, and sprinkle in the 21 Seasoning Salute. I added in 4 slices of soft cooked chopped bacon as well--yum! Stir everything together well, then transfer to a lightly greased baking dish. Roast in a 400ºF oven for 20-30 minutes depending on desired doneness. I prefer my veggies a bit crisp, and 25 minutes was perfect for us. You can also sprinkle on some freshly grated parmesan cheese (omit for Whole30) during the last 5-10 minutes if you're a little cheesy like we are.
That's it, a simple, yummy side dish to serve with your favorite main dish. Enjoy!
