One Pan Roasted Sausage and Veggies is a simple and delicious dinner to make. It only takes about twenty minutes to prep and about forty minutes to roast. The best part? Only one pan to clean. Also, keep this recipe Whole30 friendly by checking the compliance of your sausage.
We make variations of One Pan Roasted Sausage and Veggies a few times a month. I often add peppers and onions and sometimes get crazy and add some mushrooms or asparagus as well. Use the veggies you have on hand, keeping in mind their varying cooking times.
Begin by preheating the oven to 400ºF. Next, chop your potatoes into one-inch chunks. Use a large mixing bowl to toss the potatoes in a tablespoon of avocado oil and seasoning. I used Savory Spice Blend (See recipe notes for directions.) from the How Not to Die Cookbook, but you could also use a blend of pepper, garlic powder, smoked paprika, and thyme. Stir the potatoes well to ensure they are evenly coated in the spices. Finally, place the potatoes into a lightly sprayed roasting dish or sheet pan. (This cast iron roasting pan is my new favorite dish.) Place the potatoes in the oven for twenty minutes.
While the potatoes are roasting, chop the rest of your veggies and the sausage. I used a mix of broccoli and cauliflower, but again, feel free to switch up those veggies to your family's liking.
After the potatoes have cooked for twenty minutes, add the veggies and sausage to the pan. Give everything a good stir, and cook for an additional twenty minutes.
When cooking is finished, check the veggies for the desired doneness. If they are not quite as soft as you like, place the pan back in the oven for five to ten minutes. Remove the pan from the oven and let rest about five minutes before serving.
