Yes, Beef and Broccoli Stir Fry with Cauliflower Rice is gluten-free and Whole30 friendly, but that doesn't mean it isn't packed with great flavor. I happen to love cauliflower rice, but if you're not a fan, feel free to serve over rice or quinoa. (That's what Russ did.)
I actually first made this recipe while my mom was visiting. I was in the introduction phase of my first round of Whole30, so I was still limiting certain food groups, but I wanted a yummy recipe that everyone would enjoy. My version of Beef and Broccoli Stir Fry with Cauliflower Rice is adapted from Jay's Baking Me Crazy's Paleo Whole30 Beef and Broccoli. If you haven't checked out Jessica's blog, you really should. She has a ton of amazing recipes.
I made this for dinner again last week so that we would have leftovers to heat up at work for lunch. One change that I made was to increase the coconut aminos to make it a bit more saucy. I just love having a little extra sauce to soak into the rice. If you're not familiar with coconut aminos, they are a less salty, slightly sweeter substitute for soy sauce. I've actually come to prefer coconut aminos over soy sauce. You can find them at sources such as Whole Foods, Thrive Market, or Amazon.
To make the Beef and Broccoli Stir Fry, first cut your broccoli into florets, slice the onion and pepper, and slice the beef into about a quarter-inch thick slices against the grain.
Heat the sesame oil in a large skillet over medium-high heat. Add the broccoli, bell pepper, onions, ginger, garlic, red pepper flakes, and tapioca flour. Tapioca flour acts like corn starch to thicken the sauce a little.
Cook until just tender, then add the beef. Sauté about five more minutes, then turn the heat to simmer while you cook the cauliflower rice.
You can obviously create your own cauliflower rice, but I prefer to buy cauliflower already riced. Many grocery stores now carry it (some in the frozen vegetable section), and Trader Joe's has it both fresh and frozen. Cooking the rice is simple. Just sauté it in a drizzle of extra virgin olive oil with minced garlic and spices of your choice. I have found that, for me, about two cups of cauliflower rice satisfies the same as one cup of traditional rice, and it is so much healthier for you.
Of course, if you're not concerned with consuming grains, you can simply serve Beef and Broccoli Stir Fry over you favorite rice, couscous, or quinoa. I hope you enjoy this dish as much as we did.
