Roasted cauliflower and roasted brussels sprouts have become two of my favorite veggies. We've been eating them at least once a week. This Roasted Cauliflower with Prosciutto is simple to make and so tasty. You could use bacon in place of the prosciutto, but I've become addicted to adding prosciutto to recipes instead of bacon. Also, I have a hard time finding bacon that is compliant with Whole 30, and I've simply had better luck finding compliant prosciutto.
You'll need a small head of cauliflower, avocado oil, balsamic vinegar, Trader Joe's 21 Seasoning Salute, and 4 ounces of prosciutto for this recipe. Preheat the oven to 400ºF. Start by cutting the cauliflower into equal sized pieces, and place in a large bowl. Sprinkle with about two tablespoons of 21 Seasoning Salute. Drizzle with two tablespoons avocado oil and one tablespoon balsamic vinegar. Stir well to evenly coat the cauliflower.
Pour the cauliflower into a prepared baking dish making sure the cauliflower fits in a single layer. Cut the prosciutto into one to two-inch pieces and lay on top of the cauliflower.
Place in the oven, and roast for about 25 minutes, tossing the cauliflower halfway through cooking. Cauliflower will be fork tender when done.
