On my last trip to Costco, I happened across Lotus Foods Organic Millet and Brown Rice Ramen Noodles. Ever since, I've been experimenting with incorporating them into different recipes. Broccoli Chicken Casserole uses one cake that is broken apart and mixed into the casserole ingredients, then baked.
Alton Brown's Broccoli Casserole inspired my creation. His recipe sounded fantastic, but I wanted a casserole that could stand on its own as dinner and not simply a side dish. The addition of shredded chicken creates a comfort food casserole that can be eaten by itself or served with a side salad, which is what I did.
Begin by chopping the broccoli into bite size pieces, then lightly steam it. You don't want to steam it too much since it will be baking in the oven for an hour. When the broccoli starts to steam, preheat the oven to 350º. Rinse the broccoli in cold water after steaming to cool it down.
Chop the onion and mushrooms, then sauté over medium high heat for about four to five minutes. Set aside.
In a large bowl, combine the sour cream, eggs, and spices. Mix well to combine all the ingredients. Add in the chicken, sharp cheddar cheese, broken ramen noodles, broccoli, onion, and mushrooms. Stir well, then place in a lightly greased large casserole dish. Top with grated parmesan cheese, and bake for one hour. I like to use my Misto for spraying baking dishes so that I know exactly what kind of oil is being used and that there are no added chemicals.
Remove from the oven, and let rest about five minutes before serving. We kept dinner easy and simply served the casserole with a side salad. And no, the leftovers didn't last long!
Broccoli Chicken Casserole
Broccoli Chicken Casserole is an easy to make comfort food that tastes great on its own or served with a side salad.
Ingredients
- 6 cups broccoli
- 2 ½ cups shredded chicken
- 1 cup mushrooms
- ½ cup onion, chopped
- 1 ¼ cup sharp cheddar cheese, grated
- ¼ cup Parmesan cheese, grated
- 1 ½ cup sour cream
- 2 large eggs
- 1 brown rice ramen cake
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- ½ teaspoon celery seed
- ½ teaspoon smoked paprika
- ¼ teaspoon Kitchen Bouquet
Instructions
