These mojitos are bursting with fresh fruit flavor and a bit of tanginess from the lime. You'll definitely want to try one with a friend out on the patio or deck.

I love a good mojito, but I don’t like the refined sugar and other artificial ingredients that most bars include in their flavored mojitos. I used agave nectar rather than simple syrup to add a touch of extra sweetness and used real fruit rather than bottled mixers. What you you get is a truly refreshing mojito that is naturally sweetened to balance the tartness of the lime.
WHAT IS A MOJITO?
A classic mojito is made up light rum, simple syrup or just sugar, lime, mint, and club soda. You simply pour rum in the glass, add a few lime wheels, some mint leaves, and simple syrup. Muddle all the ingredients gently, then top with ice and club soda. Shake the ingredients until well combined. Flavored mojitos have become quite popular using strawberry, pineapple, cranberry, or any other fruit.
LET'S MIX UP SOME MOJITOS!
First, a quick note. The directions for all three styles of mojitos are identical with the exception of the blueberries. You can easily simply muddle the blueberries with the lime and mint. However, I found making a puree with the strawberries and pineapple much easier for mixing.
First, prep your fruit. I cut my limes into half wheels because they muddle easier, releasing more of that tangy lime flavor. Cut the strawberries into quarters, and cut the fresh pineapple into small chunks. I bought pineapple spears from the produce department, but if you're feeling ambitious, go ahead and buy a whole pineapple. Finally, lay out some mint leaves. I used five leaves per drink, plus more for garnish.
Pour the rum into a high ball glass. (I used Bacardi Light, but your favorite rum will work just fine.) Add the lime wheels and mint leaves. Muddle together thoroughly.
Place the strawberries (or pineapple) and agave sweetener in a mini blender (such as a Magic Bullet), and process until smooth. You may need to add a few teaspoons of water to achieve the right consistency. Pour the puréed fruit over the rum mixture, add ice and club soda. Shake to combine all ingredients. Pour back into a highball glass, and garnish with a lime wheel, fresh fruit, and a mint leaf.
