Grilled Peaches with Coconut Whipped Cream is a simple, light, and absolutely delicious dessert. In fact, I would put it in the “drool worthy” category. Think warm peaches with a carmelized cinnamon sugar, then topped with a healthy dallop of a creamy and dreamy coconut whipped cream, then sprinkled with a hint of nutmeg.
Don’t let the coconut whipped cream scare you. Yes, it has a slight coconut flavor, but it’s not overpowering at all. Actually, it's pretty darn delicious! This is probably one of the easiest dessers you'll ever make. The hardest part about this recipe? Remembering to refrigerate the coconut cream overnight.

HOW ELSE CAN I TOP GRILLED PEACHES?
You could also top your Grilled Peaches with vanilla ice cream or gelato, or honey sweetened Greek yogurt or ricotta. Grilled peaches are also delicious in a salad or can be made more savory by drizzling with a balsamic reduction.
PREPARE GRILLED PEACHES WITH COCONUT WHIPPED CREAM:
Refrigerate the coconut cream overnight in the fridge. At least an hour before making, place a large stainless bowl and the beaters for the hand mixer in the fridge.
Preheat grill to 400ºF. While the grill is preheating, cut the peaches in half, remove the pit, and place cut side up on a cutting board or sheet pan. Brush the cut side of each peach half with avocado oil. Grill peaches cut side down for about 7 minutes until they begin to soften.
Carefully turn over with a spatula, and sprinkle with the cinnamon sugar mixture.
Close lid and cook about 5 more minutes until sugar starts to caramelize. Remove from grill, and allow to cool slightly.
While peaches are cooling, make the coconut whipped cream. Remove the coconut cream from the fridge, turn the can upside down, and cut the bottom off. Drain off the liquid, and scoop the hardened cream into the chilled stainless bowl.
Add 1 teaspoon of vanilla extract, and beat with the mixer on medium speed until vanilla is incorporated.
Add ⅓ cup powdered Swerve, and continue mixing until it forms a whipped cream consistency, about a minute.
Scoop a spoonful of the coconut cream on each peach half, and sprinkle with a touch of nutmeg. Each half peach is one serving.

If you get a chance, you really should try it. For me, they are the perfect balance of sweetness. I created them specifically to share with a friend who has to watch his blood sugar. I used powdered Swerve which doesn't interact with blood sugar levels. Both of us were happy to find that his blood sugar did not spike after eating one.
