Can it get any easier than a Sheet Pan Dinner? Simply chop your veggies and meat, toss with seasoning and a drizzle of olive oil, spread out on a sheet pan, and roast. I just love simple, tasty meals.
I prepped this recipe on a day off that I was feeling under the weather. It's a rare occasion when I don't feel like cooking, but it was definitely one of those days. You know the ones, all you want to do is snuggle up on the couch and watch a movie. Well, that didn't happen. There was too much writing and photo editing to complete, but I could give myself a break on dinner.
I took 20 minutes in the afternoon while I still had some energy and chopped all the ingredients and placed them in a large bowl. I added the seasonings, and tossed well. The bowl sat in the fridge for a few hours until I was ready to place everything in the oven and roast it for dinner. Pretty simple, even for a sick girl. You could just as easily chop all the ingredients while the oven is preheating.
Start by preheating the oven to 400ºF. Cut the sausage into one inch medallions. (I used Trader Joe's Smoked Apple Chardonnay Chicken Sausage.) If you're participating in Whole30 round, make sure your chosen sausage is compliant. Place the sausage in a large bowl. Chop your veggies into approximately one inch chunks, and add to the bowl. I used a zucchini, baby bellas, red bell pepper, yellow beans, and yellow onion. Cut the potatoes smaller than the veggies so that they will cook through. I used about half-inch chunks.
Add the 21 Seasoning Salute, rosemary, thyme, extra virgin olive oil, and balsamic vinegar to the bowl, and stir well. Place the mix on prepared baking sheets--I used two to ensure that nothing was overcrowded. Roast in the oven about 30-40 minutes, tossing halfway through.
Russ liked this dinner so much that he went back for seconds, and took all the leftovers to work for lunch the next day. Easy and delicious is an amazing combination.

Ingredients
- 12 ounces chicken sausage (I used Trader Joe's Smoked Apple Chardonnay.)
- 1 medium zucchini
- 1 medium red bell pepper
- 8 ounces baby bellas, quartered
- 8 ounces yellow beans
- ½ medium yellow onion
- 3 medium red potatoes, cut fairly small
- 2 tablespoons 21 Seasoning Salute
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
Instructions
- Preheat oven to 400ºF.
- Cut the sausage into 1 inch thick medallions. Place in a large bowl.
- Cut the zucchini into about 1 inch chunks. Cut the bell pepper and onion into fairly large chunks. Trim the yellow beans, and break in half. Quarter the baby bellas. Add all the veggies to the bowl with the sausage.
- Chop the potatoes into smaller pieces than you would normally for roasting. You want them to cook evenly with the vegetables. I used about ½ inch chunks. Add the potatoes to the bowl.
- Add the 21 Seasoning Salute, rosemary, thyme, olive oil, and balsamic vinegar to the bowl. Toss everything together to evenly coat with the spices.
- Pour onto a lightly greased sheet pan (or two), and spread out evenly. Roast in the oven for about 30 minutes, tossing half way through.
