Champagne Vinaigrette has become a new favorite dressing for me. It’s tangy, a little sweet, and creamy thanks to emulsification.
I specifically created Champagne Vinaigrette to dress my Roasted Beet and Endive Salad, but it is delicious on any green salad. Its bright and fresh flavor will make it a favorite for your spring and summer salads. Even Russ skipped the ranch one night (gasp!) in favor of trying this vinaigrette on his dinner salad. Yep, you guessed it, he liked it.

Why champagne vinegar?
Champagne vinegar is not as sour as apple cider vinegar. I wanted a lighter vinaigrette that would allow the fresh flavors of a salad to really shine through and just be slightly enhanced.
What can I substitute for champagne vinegar?
If you’re like me, and already have plenty of vinegars in your pantry, you can easily substitute white wine vinegar in this recipe. I wouldn’t recommend apple cider or other stronger vinegars, as those would really change the flavor profile of this recipe.
How do I store champagne vinaigrette?
Store the vinaigrette in a glass container in the fridge for up to a week. The oil will thicken in the fridge, so simply bring to room temperature before serving.
HOW TO PREPARE CHAMPAGNE VINAIGRETTE:
Preparing this vinaigrette is easy peasy. Simply peel your garlic and shallot, give them a rough chop, and place in a blender or food processor. (I used my Magic Bullet.) Add the dijon, vinegar, lime, honey, hot sauce, and salt and pepper. Process until smooth. Add the extra virgin olive oil and continue processing until emulsified, about 30-60 seconds.
Alternatively, you can simply add all the ingredients to a mason jar, and shake vigorously to incorporate. You will need to mince the garlic and shallot if you go this route. The vinaigrette won’t be creamy like the blended version, but it will be just as delicious.
SERVING SUGGESTIONS:
- Toss it with your favorite green salad.
- Use as a marinade for chicken or pork.
- Brush on grilled veggies.
- Use it to dress a pasta or bean salad.
- Use it as a veggie dip.
- Drizzle over hummus.

Easy Champagne Vinaigrette

I think it's fairly common. If you don't find it, you can use white wine vinegar instead.
