Yum! Creamy Veggie and Chicken Sausage Gnocchi is so easy to make and full of fresh flavors. For me, this is pure comfort food, and I was excited to find Delallo Gluten Free Gnocchi. Of course, you can use any gnocchi you like, or even a pasta for that matter.
Begin by chopping the zucchini, onion, pepper, and basil and removing the stems from the spinach. Slice the chicken sausage links (I used Trader Joe's Smoked Apple Chardonnay.) in half lengthwise, then slice into half moons about half an inch thick.
Start a pot of water boiling to cook the gnocchi.
Heat two tablespoons of avocado oil in a large skillet. Add the chicken sausage and the zucchini, and sauté until the zucchini begins to soften and the sausage browns. Set aside.
Using the same skillet, sauté the onion and pepper until the onions are translucent, about five minutes. Add the sun-dried tomatoes and minced garlic, and sauté a few more minutes.
(Don't forget to boil the gnocchi. Gnocchi cooks faster than pasta, so keep an eye on it. When the gnocchi begins to float to the top, it is ready. Don't over cook it, or you will have a mushy mess.)
Mix the tapioca flour with a quarter cup of the half and half. Slowly pour the remaining half and half in the skillet and stir the contents. Add the spinach, still stirring. When the spinach begins to wilt, pour in tapioca flour mixture, add the parmesan cheese and basil, and add the sausage and zucchini.
Sprinkle in the pepper and Cantanzaro Herbs (Italian spice blend). Stir well to combine all ingredients. Simmer until the sauce begins to thicken. Finally, stir in the cooked gnocchi.
We simply served Creamy Veggie and Chicken Sausage Gnocchi with a side salad, but you could also include garlic bread if you like. I hope you enjoy this creamy comfort food dish as much as we did.

- ½ green pepper
- 3 ounces fresh spinach
- 4 ounces sun dried tomatoes
- 2 teaspoons minced garlic
- 1 ½ cups half and half
- 2 tablespoons avocado oil
- 1 teaspoon black pepper
- 2 tablespoons fresh basil, chopped
- 2 teaspoons Cantanzaro Herbs
- 1 cup Parmesan cheese
- 1 tablespoon tapioca flour
- 12 ounces gnocchi (I used Delallo Gluten Free Gnocchi.)
- 2 tablespoons fresh parsley, for garnish
