BBQ Chicken Sandwiches are a super easy, weeknight dinner. You only need six ingredients, and about 30 minutes, to have a tasty, hearty dinner on the table.
For me, these BBQ Chicken Sandwiches are a complete comfort food. The smoky barbecue sauce reminds me of cookouts with my dad back in the Pacific Northwest. More often than chicken, he would make pulled pork or brisket, but this variation is an easy way to get a similar flavor without the long smoking process. Although, I DO love using my smoker as well.
I used my Homemade Barbecue Sauce (no refined sugar) for this recipe, but you can use any store-bought barbecue sauce that you like. Pretty positive your family will love these BBQ Chicken Sandwiches as much as we do. Plus, it’s a great way to feel like you’re having a cookout indoors when the weather is cold and dreary outside.
PREPARE BBQ CHICKEN SANDWICHES:
First chop your red onion and bell pepper. Next, drizzle about a tablespoon of extra virgin olive oil in a skillet heated over medium heat. Add the diced onion and peppers, and sauté about 5 minutes until the veggies begin to soften.
Add the minced garlic, and sauté about one more minute. Turn the heat to low, and add the shredded chicken and Homemade Barbecue Sauce. Cook about 10 minutes over low heat, stirring to mix all ingredients well.
Serve on your favorite toasted buns with melted cheese, if you like. The BBQ Chicken meat is also delicious topped on a baked sweet potato.

RECIPE NOTES:
- Don’t have time to make my Homemade Barbecue Sauce? You can substitute your favorite store-bought barbecue sauce. Although, I will warn you that mine is pretty addicting.
- I used leftover rotisserie chicken for this recipe, but you could also poach a chicken breast or two, then shred them.
- Avoiding gluten? Just use your favorite gluten-free buns. Or, try topping a baked sweet potato with the BBQ Chicken Sandwich mix.
- If you have leftovers, they do freeze well.
