Yum! I love guacamole, and I love hummus. Avocado Hummus marries those two favorites into an amazing dip for chips, pita, or veggies--pretty much whatever your heart desires.
Plus, it couldn't be any easier to make. Simply place all your ingredients in the food processor, and turn it on until the hummus is blended smooth. Yep, that simple. It only takes about eight minutes to throw together and makes a perfect work week snack or party appetizer.
Begin by draining and rinsing the garbanzo beans, then place them in the bowl of a food processor. Next, slice the avocado in half, take out the seed, and scoop the inner flesh into the food processor with the garbanzo beans. Add in the cilantro, minced garlic, salt, cumin, chipotle powder, lime juice and zest.
Pulse the ingredients to begin blending, then with the food processor running, drizzle in the avocado oil, continuing to blend until smooth.
Spoon the Avocado Hummus into a serving bowl and enjoy with veggies and/or chips. It also makes a wonderful spread for wraps or sandwiches.
